Although designed for hamburgers and grilled sausages, Our condiments with a kick, are great on other food groups as well. Try them with rice and beans and other vegetable dishes. Add some kick to your soup, chili, and stew. Wake up your potato, pasta, chicken and tuna salad. Spread some on pizza or just dip them from the jar with chips and pretzels. Following are some other recipes and suggestions for you to enjoy. Be creative, come up with your own uses, then drop us a line so we can include them here!

PEPPERMASH Sandwich Sauce:
Mix equal parts mayonnaise, ketchup and PEPPERMASH. Spread on your favorite bread/roll. Great with grilled ham/cheese, corned beef, and coleslaw, turkey, chicken, or pork.

Twice-Baked Potatoes:
Bake a potato (or two). Split the potato open and remove the guts. Mash potato guts with sour cream, butter, and PEPPERMASH to taste. Cram mixture back into the potato skin. Cover with your favorite ground cheese mixture and place under broiler until the cheese starts to bubble. Remove your masterpiece from the oven, sprinkle with chopped bacon, and fresh chopped chives and enjoy. It's a dinner in itself!

Party Dips:
1. Add zip to your store-bought salsa by adding PEPPERMASH.
2. Nuke chopped cubes of Velveeta processed cheese food spread and a liberal helping of PEPPERMASH in the microwave, serve with corn chips or straws, don't forget to share.
3. Add PEPPERMASH to your nacho recipe! It tastes great mixed with refried beans.

PEPPERMASH Omelet for Two
Simmer chopped onions in butter (feel free to add mushrooms and bell peppers as well) until tender, Whip four eggs and a dash of ½ & ½ in a bowl. Brown your meats (diced ham) with the onions if you choose and then lay in your whipped egg mixture. When the bottom of the omelet is browned, layer in shredded cheeses (Swiss, mozzarella, Parmesan). When the cheese starts to melt spread PEPPERMASH over one half of the omelet to taste and a layer of sour cream on the other half. Toss a few bean or alfalfa sprouts on the omelet before folding and flipping. Serve omelet with toast and strong coffee. Perfect for a lazy morning brunch with your significant other.

Peanut Butter, PEPPERMASH, and Sliced Dill Pickle Sandwich
Yep, sounds weird but just try it on fresh bread! A friend of our came up with the PB and pickle combination (she wasn't even pregnant) and we had to add the zing!

Grilled Brown Sugar Kielbasas
Slice a ring of sausage in two and cut into 1" sections. Place the sausage pieces on a hot skillet and then sprinkle on brown sugar. Cook until the sugar caramelizes. Serve with PEPPERMASH and Mustard plaster as dips. ENJOY! Have fun, enjoy the PEPPERMASH and Mustard Plaster with your friends and family.

Fiery Hollandaise w/ a kick - Great for Eggs Benedict (Bob 12/6/2006)
Ingredients:
- 1 Package of instant Hollandaise sauce (can also use Bernaise)
- 2 TBSP capers
- 2 TBSP (more or less according to desired heat) Dr. Gonzo's Supermash
- 1 Tsp Lemon Juice
- 1 Dash of salt (+/- according to taste)
- Use over Eggs Benedict, Omelettes, Fried Eggs, Even Asparagus or Brussels Sprouts!

Stuffing (11/24/2005)
Follow the family recipe for stuffing. Blend in four to six tablespoons of Peppermash just before it goes into the bird. Yum!
 
Spiced-up Crescent Rolls - Great Appetizer (Eric & Norma 3/21/2005)
Ingredients:
- 1 can of reduced fat or light crescent roll dough several slices cheddar cheese (Cabot sliced cheddar for sandwhiches works great)
- Peppermash or Supermash to taste
Directions:
-separate dough into triangles (for smaller appetizers each triangle may be cut in half)
-put one triangle or cube of cheese on the dough
-cover with the mash of your choice
- roll and bake as directed!
Optional egg wash on roll while baking makes a nice crust and you can sprinkle with sesame seeds for an even more gourmet look! We have made for several parties and never have any left over. Infact the first time I made them they were gone before I even got to try them!
 
Gotta Gettem Grits (Anne in Boston 11/14/2005)
Ingredients:
- Grits
- Peppermash, to taste
- Shredded cheddar cheese, to taste
Directions:
- Make grits according to recipe.
- When grits are almost done, begin to add both Peppermash and cheddar cheese to taste. (e.g., for one serving, 2 teaspoons of pepper mash and 1/4 cup shredded cheddar cheese). Also, don't skimp on the butter

Award Winning Cheesy Dynamites (Al 10/27/205)
Basically a "Doctored" hot Sloppy Joe recipe that is a hit at any party!
- Grab a large soup pot (or a crock pot).
- Toss in 6 lbs. of ground beef and put it on low heat.
- Mince and toss in one large white onion and a green bell pepper grab a large handful of garlic cloves, smash and toss into pot.
- Add a large can of stewed tomatoes and two cans of tomato paste.
- Toss in a couple of cans of re-fried beans.
- Shake in some chile powder and add a pinch of italian seasoning.
- THEN add either a whole jar of Supermash, Scotch Bonnet Stew OR Habeneromash (your choice)
- Stir contents and simmer 'till everything comes together nicely.
- Prior to the party add a large block of cubed Velveeta. Let the cheese melt.
- Serve one teaspoon of the "Dynamite" mixture in a finger roll.
Guarenteed to feed dozens and be gone in under an hour. (Great with good beer) Even better the next day!!

Hot Dog - Reinvented (Charles 10/12/2006)
As an engineer, I have always had a burning desire to invent something -- or re-invent something. So here's my recipe.
- Dice enough onion for a hotdog -- OK, for TWO hotdogs.
- Grill the hotdog. Grill the bun. Do both sides if you want.
- Replace the yellow mustard with Dr. Gonzo's mustard.
- Replace relish with Dr. gonzo's Peppermash.
- Lie back and savor the difference. It's a whole new meal.

Dr. Gonzo’s Famous Peppermash Salmon Dinner for Lovers (Roy 10/4/2005)
Ingredients:
- 2 - 8oz Salmon Fillets
- 1 large leek -- cleaned and sliced thin on bias (2 cups)
- 1 cup your choice of beer. Some would use white wine.
- 1/2 cup Dr. Gonzo’s Peppermash
- 2 Tsp. Olive Oil
Directions:
Generously coat salmon with ¼ to 1/2 cup Dr. Gonzo’s Peppermash. Set aside for at least 15 minutes – longer is always better when you are getting to know someone new. So spend that time getting to know your dinner companion. Slice and wash 2 cups of leeks. Pan sear the salmon in a hot pan with oil until cooked to desired temp. Take salmon out of pan and set aside. Deglaze pan with a cup of beer and ¼ cup of Peppermash. Toss the leeks into the hot pan and cook until soft. Top the salmon with the leek sauce.
Serves 2 by candlelight. Serve with wild rice and a salad.

The Incredible Edible Peppermash Egg (Ralph 10/5/2005)
Start by heating a spoonful of olive oil or by melting a dab of butter in a skillet.
Sautee 1/3 cup of onions till soft. (Add chopped peppers or tomatoes if you like.)
Scramble three eggs. Four eggs to serve two people.
Mix in one tbsp. Dr. Gonzo's Peppermash (Two tbsp if you want more heat.)
Whisk and pour over contents of skillet
Add grated cheese if you like or leave it out.
For Scrambled Giganticos, whisk egg mixture occasionallly while cooking. For an Omlette, let rest and flip when ready.
Makes a slightly sweet and slightly hot breakfast.

Buffalo Balm Chicken Wang Dang Doodle Sauce (2/10/2004)
Grab yourself a bottle of Dr. GONZO's Buffalo Balm Hot Sauce and a large skillet. Preheat a dozen (or so) chicken wings in the oven at 350 degrees on a cookie sheet. While you wait for the wings, place the skillet on the range and on low to medium heat. combine the contents of your Buffalo Balm Hot Sauce with a stick of salted butter. Once your wings are at temperature, flip them into the skillet and then pour into a large bowl and impress your friends! -make sure that you have enough "Adult Beverages" on hand. Enjoy!

Buffalo Balm Sunrise Shots (Eric 7/8/2004)

Blackfly Pastrami, Provolone Melt (6/6/2004)
Get yourself some good rye bread and slather on a generous portion of Moose River Adirondack Blackfly Mustard. Layer on a pastrami and place under your broiler untill the meat heats up. Remove and then apply a double layer of provolone cheese and replace your creation under your broiler until the cheese is bubbling. Garnish with a half sour pickle spear and some chips. WOW!
 
Kickin' Pumpkin Seeds (B. Steiger (3/14/2004)
Kickin' Pumpkin Seeds: Just clear pumpkin seeds of all of the "gunk" and mix in as much Mustard Plaster as you wish. Spread into single layer on greased cookie sheet, bake at 323 until light brown. (seeds will stick together, but you won't care much about that!) ENJOY!
 
Party Dips (2/10/2004)
Take a bottle of "World Famous" PEPPERMASH or "World Famous" Jalapenomash mix in sour cream (to taste, 50%-50% is good for most folks). Serve with your favorite chips with chopped green onions as a garnish.
Feeling brave? Step up to the "Industrial Strength" SUPERMASH.
 
Buffalo Balm Hot Sauce Bloody Mary Recipe (2/10/2004)
One bottle of Motts Clamato or V8 juice, pour into pitcher
Fresh ground horseradish, scoop into juice to "pinkify"
2 cloves of garlic, crush and toss into juice
Worcestershire sauce, to taste
Buffalo Balm Hot Sauce, to taste
Quarter 2 large limes, squeeze and add to juice
Add pinch of Italian seasoning
Mix ingredients and let sit for 20-30 minutes
Serve in tall glasses over crushed ice with GOOD VODKA (Absolut, Skyy etc.)
Garnish with green onions and young celery
Sprinkle celery salt and course ground black & white pepper
 
Dr. Gonzo's Deli Spirals (1/31/2004)
- Mix 1/4 Peppermash in to 8oz Cream Cheese.
- Spread liberally on rectangular rollup bread.
- Layer on your choice of deli meat (Ham, Smoked Turkey, Roast Beef...).
- Roll it up.
- Slice in to 1/2" to 1" spirals.
 
Dr. Gonzo’s Make Your Own and Save Money Hummus
Ingredients:
-- 2 (15 oz) Cans Garbanzo beans
-- 2-4 tablespoons Dr. Gonzo’s Peppermash, Jalapeno Mash or Super Mash ( to taste)
-- 1 Red Bell Pepper, Roasted, seeded, skin removed
-- 10 Cloves Garlic
-- 10 Cloves Roasted Garlic
-- 1/3 cup Tahini (Sesame Paste)
-- 1 teaspoon Salt
-- 1/2 teaspoon cumin
-- 6 tablespoons Lemon juice
-- 2 tablespoons Olive Oil
Garnish:
-- Cayenne or Paprika
-- Olive Oil 
Instructions:
Drain garbanzo beans, reserve liquid from one can. Put all ingredients in a blender and process till smooth. Add reserved liquid (or more olive oil) if hummus is too thick.

To serve: Put into a serving dish, sprinkle with cayenne or paprika and a drizzle of olive oil. Chill before serving

Serve with toasted pita wedges. Also great with vegetables or with ground beef

This recipe makes 2 cups.
 
Ryan's 110% Chip Dip
 A new twist on an old favorite (good luck with the 'new' math) from the current Supermash eating Champion of the known world.
 
50% sour cream
40% "Industrial Strength" Supermash

Dr. Gonzo’s Curiously Sweet Lahsi, (Roy, 8/8/06)
Crush in a blender: 4 cubes ice

Add and mix until frothy:  2 TBsp Dr. Gonzo’s Peppermash, 4 cups plain, whole milk yogurt, 1 cup heavy cream, 1 cup sugar, 1 teaspoon salt, 2 cups water

Chill and serve very cold

Gonzo Cool Smoothies, (Roy, 8/8/06) Enjoy these yogurt smoothie recipes.
1 cup cranberry-blackberry juice ½ banana 6 oz. key lime or lemon flavored yogurt 3/4 cup frozen raspberries 1 TBsp Dr. Gonzo's Peppermash 1 cup crushed ice Place ingredients in blender and mix on medium-high until well blended. Pour into glasses - chill and serve or serve immediately.

1 cup white grape juice 1 medium cucumber peeled 6 oz. plain yogurt 1 TBsp Dr. Gonzo's Peppermash 1 cup crushed ice Place ingredients in blender and mix on medium-high until well blended. Pour into glasses - chill and serve or serve immediately.

Happy Pistachio Hot Lassi , (Roy, 8/9/06)
Serves 2
  • 2 cups natural yogurt
  • 2 teaspoons sugar
  • 1 TBsp Dr. Gonzo’s Peppermash
  • 3 Ice Cubes
  • 1 Tablespoon lemon juice
  • 2 lemon slices peeled
  • 24 crushed pistachio nuts
  • Half cup of water
Mix in blender until smooth. Chill and serve
 
Bernie's Dip, (Bernie, 2/24/07) 
 1 Cup of Cottage Cheese
1/2 Cup of Tuscan Bean Dip (found at Trader Joe's or other speciality food store)
1 or 2 tablespoons of Peppermash or Jalapenomash
 
Beat the Cottage cheese until smooth
Fold in Tuscan Bean Dip
Add Peppermash or Jalapenomash to taste.
 
Serve on Pita bread chips or toast.
 
Alternative recipe uses Ricotta Cheese instead of Cottage cheese.
 
One Hump Dry Rub No. 2/Sour Cream Dip
SIMPLE and great! Stir in One Hump Dry Rub (two or three teaspoons -to taste) into a 1/2 pint of sour cream. Serve on crackers or chips. Might go well with 'adult' beverages at your next soiree.
 
Buffalo Balm Ranch Dip
Great for your friends who think that they do not like the 'heat'. Stir some Buffalo Balm Hot Sauce into a bowl of Ranch Dressing (to taste). Serve with veggies or 'something FRIED'; boneless chicken wings, mozzarella sticks, jalapeno poppers, potato skins or deli meat roll ups. Enjoy!!
 
Pohgonzha Sauce, (Patrick Gouin, Erik Youngstrom, and Matt Wallace, 5/12/07)
Any variety jar of tomato pasta sauce, preferably with meat. Dr. Gonzo's Supermash, Buffalo Balm, and Garlicmash to taste. A couple oz. of any BBQ sauce. A generous amount of cheddar cheese. 2 oz. roughly any hoppy beer. 2 oz. whole milk.

1 cup chopped ham
1/4 cup chopped celery
1Tblsp. Supermash
1Tsp. Blackfly Mustard
whip up in a food processor for a few seconds and spread on bulkie roll. OHH YEAH!
 
Crab Cakes Ala Roth, (Bernie Roth, 5/07)
1lb canned claw meat
mince onion, shallots and celery to taste
bread crumbs, salt and pepper
Stir in mayo and Blackfly mustard to hold mixture
Buffalo Balm Hot Sauce to taste
Shape and bake at 450*
 
Mikey's One-Eyed Trouser Tuna Salad, (Mikey Johns, 6/07)
1 can of tuna (drain)
Minced celery/onion to taste
1 or 2 Tblsp. Jalapenomash
Smoke Isle. Elixir to taste.
Serve on a bed of Romaine lettuce with some cottage cheese on the side or on a toasted Potato roll.

Drunken Man's Dream Sub (Pat Gouin, 10/07)
Honey wheat bread (or bread of choice) One side horse radish on bread, top with roast beef. Mustard Plaster on the other half, top with turkey. Melted with American/Swiss cheeses. Add a good layer of Supermash bacon on top of that turkey. Lettuce, tomatoes, pickles, etc. optional. Enjoy!
 
GONZO'd Wing Sauce (Jeremy Goldberg, 10/07)
Not wanting to make just another Buffalo wing sauce, and having all the Gonzo sauces at my disposal, I set out to make something a little different teamed up with some of my own beer (I'm the head brewer at Cape Ann Brewing in Gloucester, MA). Here's what I came up with: 2 lbs. Wings, 1 tbsp. Dr. GONZO’s Supermash, 1 tbsp. Dr. GONZO’s Garlic Mash, 1/2 Cup of Dr. GONZO’s Buffalo Balm, 1/2 cup of Soy Sauce, 1/2 cup Fisherman's Navigator(any dark lager will do, Cape Ann Brewing Doppelbock was my choice), 1 tbsp. Ginger, 1/2 cup Brown Sugar, 1/4 cup flour, 2 tbsp. butter. Mix all ingredients together in a saucepan, and cook on stovetop over medium heat for 15-20 minutes. ENJOY!
 
GONZO'd Vanilla Ice Cream (Alyssa, 12/07)
On the hottest of hot days, mix 1/2 tsp. of the professional grade habaneromash with two scoops of vanilla ice cream and voila! it's sweet and rich and spicy and really a lovely taste unlike any other. Keep making your stuff...we love it!
 
Killer Cortez Tuna Sandwich Supreme (Don Cortez, 2/08)
My recipe for Tuna sandwich. Everything has to be added relative to your taste. Mayo, Supermash, couple dashes of Smoke Isle. Elixir and BAM! Best tuna sandwiches you will ever eat! Substitute any veggies you wish to add such as onions, celery, nuts, etc. Thanks, Don
 
Miss Beth's Calamari in white wine over linguine (Beth, 7/08)
... unabashedly plaigiarized from epicurious.com. 

- 2 lb fresh, cleaned calamari.

- 1 bottle white wine, dry-ish.

- 1 tin of anchovy filets.

- 1 medium to large basil plant.

- a lemon.

- Garlic Mash No.4.

- Dragon's Tearz infused olive oil.

- 1 lb linguine.

 

Prep:

- set a large pot of water to boil.

- slice the calamari into rings.  Marinade using 2 generous

  spoonfuls of Garlic Mash and a couple big squozes of lemon juice.

- smoosh the anchovies to smithereens with a fork.

- decimate the basil plant, and cut its leaves into strips.  Water the plant,

   say something sweet and soothing to it, and set it back outside in the sun.

- pour a big glass of wine for the dish and divvy up the rest among the cooks.

 

Cook:

- add the linguine to the pot of boiling water.

- meanwhile, broil the calamari  (Heads up: reserve the juice.)

  5-7 minutes should do it, depending on the size of your rings.

- in a large skillet, blend about 1/2 cup of wine, the anchovy mushings,

  and a judiciously chosen bit of Dragon's Tearz ( 3/4 - 2 tsp, depending

  on your audience.)  Reduce the liquid by as much as half.

- When the calamari is done, add in the juice from the broiler pan.

   Don't add the calamari itself yet, since nobody enjoys eating rubber

   bands.  Cook a little more to let the flavors blend.

   (Rescue measure:  If your Lovely Assistant throws away the calamari

   juice by mistake, add a large spoonful of Garlic Mash and more wine

   to the sauce and forge bravely ahead.  Smile.  Life is good.)

- When you think the sauce is done (it won't be thick, so don't wait for

   that), add the calamari and throw in the basil leaves.  It's done when

   the basil wilts.

 

Start to finish in about 40 minutes.  Of course, you can get the marinade going hours ahead if you have the time, and it's even better.
 
Kahmehameha-Mayo with Turkey on Rye (Dorothy, 7/08)
Spread slices of dark rye with mayonnaise, then slather with Gonzo's Kahmehamehamash. Top with sliced turkey and a couple slabs of Muenster cheese. Place under broiler until bread is slightly toasted and cheese is slightly melted. Oooooh!
 
Kahmeha-mazing Dip (Dorothy, 7/08)
Combine 1 package of cream cheese (softened) with 2 tbsp sour cream. Stir in about 1/4 cup of Gonzo's Kahmehamehamash, or more as desired. Eat with crackers, chips, pretzels or right off the spoon!
 
Betsey's Laughing Cow Dip (Dorothy, 7/08)
Mix One Hump Dry Rub into Laughing Cow Swiss cheese - a sophisticated and original dip (low cal, too)!
 
Garlic Mash Garlic Bread (Dorothy, 7/08)
Slice a baguette (long French loaf) into 1-inch slices and spread with equal parts butter and olive oil. Top with a little salt and parsely, if desired. Toast under broiler until just starting to brown. Serve with individual portions of Garlic Mash, say 1/4 cup dollops on everyone's plate for dipping. This is important, because if you have the Garlic Mash on one plate it won't be fair. A horrible argument will ensue, and elbows will be flying. Add more dollops as necessary.
 
Wicked Smart Wiener (Dorothy, 7/08)
To any vegetarians out there: do not be afraid! Wicked Wiener Wonder Relish is wicked good on a Smart Dog...
 
Kamehamehamash Roll Ups (Dorothy, 7/08)
I've never really enjoyed fruit in savory items, but I am so hooked on this stuff... something about the fiery blend of peppers with the subtle sweetness of pineapple/coconut. Try it just on a slice of turkey (or tofurkey) with a little cream cheese, rolled up. And with coconut shrimp? Sooo good...
 
Dr. Sandra's Emergency Road Trip Grill Kit (Dr. Sandra, 7/08)
I was able to get out to the Catskills Irish Arts week.  I knew I could cook anything I could put on a grill, but I was limited by how much stuff I could bring with me.  So packed aluminum foil and three of your products--Garlic Mash, Wicked Weiner Wonder Relish, and Super Mash.  Perfect.  Garlic Mash marinated chuck steak, GM and Super Mash on vegies in a foil pouch.  Tia Peanut sauce made by mixing the three with peanut butter.  I cannot think of more economic and space conserving choices.
 
Crazy Garlic Cracker Spread, (Barbara, 8/08)
2 Tblsp of Garlicmash, 8 Oz. softened cream cheese, 1/3 cup parmesian cheese
Mix together and refridgerate for 1 hour. Serve with crackers of your choice.
 
Kamehamehamash Ultimate Hawaiian Pizza, (Joe, 8/08)
You’ll need: Pizza dough Kamehamehamash Sliced deli ham An onion Mozzarella cheese The pineapple in the Good Doctor’s mash makes it the perfect alternative to marinara in this spicy twist on an old favorite. I found that as the pizza bakes, the onion caramelizes a bit, adding a sweet complimentary roundness to the mash. Roll out your favorite homemade pizza dough and spread Kamehamehamash as you would red sauce, leaving a crust to hold on to (depending on how much mash you add, you may need to hold on to your socks as well). Cover the pizza with a layer of mozzarella. Add sliced ham and onion. Finish with a little more mozzarella. Bake at 450 degrees for 20 minutes. Enjoy!
 
Up the Wazoo Shooter: (Smells Like Smoke BBQ Team, 8/08)
1 shot Wazoo Juice, 3 shots Sailor Jerry's Spiced Rum. Shake with ice and pour into shot glasses. Serves four. Have to say "Up the Wazoo" b4 tossing it back. Enjoy.
