Black flies and mustard in the same sentence? Only the "Good Doctor" could have thunk this up. Working with highly ranked government officials in Albany to reduce the Adirondack's black fly population, the "Good Doctor's" plan should eventually reduce the black flies and provide us mustard lovers with a tasty treat. To lure in massive swarms of black flies (the Official Bird of New York's Adirondack State Park), the "Good Doctor" uses busloads of Old Forge tourists as bait. Once the swarms of black flies have descended on the hapless tourists, the "Good Doctor" and his crack team of black fly experts snare the wild beasties, deftly remove the testosterone soaked Adirondack Oysters in a delicate surgical maneuver from only the finest 'bull' flies before releasing them all back into the wild. Now you know how we get that slightly nutty aftertaste in this great mustard. Is this a stroke of environmental conservation and culinary genius? You be the judge. When I the jar for first time, I was a bit skeptical. But as smothered it on my hotdogs paired with some supermash as a relish, OMG! this stuff is good!

Thanks to this product, I have converted countless friends and family members to Dr. Gonzo's products and even the very idea of using mustard as a condiment! Fantastic on a cracker with turkey and a little Mustard Plaster as well, if you're feeling truly decadent. =)

Really amazing stuff. This is deli meats new best friend. My favorite use for this is one that the good Dr. showed me: saltine cracker.. Blackfly.. cheddar cheese.. turkey.. Jalapenomash, simply amazing, get some now.
